Originating from Abruzzo, Spaghetti alla Chitarra is a long format with a square section. Historically the pasta was cut with a tool called a "chitarra", consisting of a wooden frame on which thin steel wires were stretched. The typical condiment to combine with this format is meat sauce or tomato sauce enriched with meatballs. Spaghetti alla Chitarra are also excellent with tomato and aubergine-based sauces.
